Château Cantillac

Owned and operated by the Fernandez family since 1956. The estate is situated in the village of Sauveterre de Guyenne, in the heart of the Entre-Deux-Mers region of Bordeaux. Today, the vineyards and winemaking are overseen by grandson Jean Fernandez, who continues the family tradition of crafting approachable, 100% Merlot wines.
A sustained ruby red wine that unveils a generous and intensely fruity bouquet (of redcurrant, blackcurrant and blackberry) with harmonious highlights of spicy and vanilla notes. The palate is a dense, rich carpet of lush, ripe fruit and fine, powerful tannins from Merlot grapes harvested at perfect maturity.
Work in the vineyard starts in the late autumn, with winter pruning. The method used is the traditional “mixed Guyot” system. Leaf-culling is concentrated around the grapes to allow them to attain optimum maturity and benefit fully from the sunshine. All the viticultural work is aimed at controlling yields and producing quality grapes. The harvest in, they focus their efforts on the winemaking, using traditional methods while also incorporating modern œnological know-how. The ageing process, which takes place in temperature-controlled vats, is carefully and thoroughly monitored. In close collaboration with their œnologist, they select the best blend from all the vats to obtain the best-balanced, most harmonious wine
