Pale yellow in colour with greenish hues. Herbal notes such as tomato leaf as well as fresh tropical fruit like grapefruit, pineapple and mango. A fresh wine with balanced acidity with brings out the fruity sensation on the palate and gives for a long, pleasing finish.
Greek and Mexican food are the ideal match for this wine. It really works with the avocados, tomatoes, green onions, olives and sharp cheeses like feta.
The ripe Sauvignon Blanc grapes are picked before dawn to preserve the acidity and freshness of the wine - with the grapes pressed within hours of picking. Once cleared of any solids, the juice is transferred into steel tanks to ferment at a cool 12 degrees C for around 20 days using a yeast strain developed to enhance the floral and herbaceous characters of Sauvignon. The wine ferments until all the natural sugar is used, then racked into a settling tank for clarification using natural gravity. No Malolactic is used, so the wine is filtered and bottled in early Spring
