Pato Torrente comes from red grapes picked in the coolest part of the day, using a combination of Merlot, Pais yet dominated by Cabernet Sauvignon grapes. The grapes are crushed and the clear juice is macerated on the pulp and skins of the red grapes as fermentation starts, with the wine picking up colour nd flavour over 2 days before the now pink juice is racked off to continue ferment in steel tanks at a cool termperature . the remaining juice with all the skins and pulp continues to ferment to make a deeply coloured red wine.
