Sourced from two separate vineyards on our Eden Valley holdings, the first block is one of Jim Irvine’s original plantings from 1997. High in altitude, but well protected from the elements, the well-drained sandy loam produces delicate and aromatic fruit. The second vineyard is just “down the hill” on the next-door Spring Gully site. The soil is slightly rockier and lower lying, adding a depth of flavour and complexity to the blend. Grapes and juice are handled gently, but oxidatively as a means of controlling any phenolic pickup and maximizing flavour. The juice is fermented on light solids predominantly in stainless steel, although a small component is barrel fermented in old oak to add depth and texture to the finished blend.
