Domaine Paul Pillot

The domaine dates back to the second half of the 19th century when Thierry’s great-grandfather, Jean-Baptiste Pillot, decided to concentrate on viticulture rather than barrel making, having done both for some time previously. After the First World War his two sons, Alphonse and Henri, took over the domaine and continued to accrue vineyards. They eventually went their separate ways and Henri was succeeded by his son Paul at the tender age of 21 in 1968. It was Paul who really extended the holdings of the domaine and bought many of the vineyards which the domaine is famous for now, such as Caillerets and Grandes Ruchottes. Thierry joined his father in 1999 as did his sister, Christelle four years later. He has been running the domaine now for about ten years.

Tasting Notes

An enormous steel structure, tight and unyielding with fine citrus acidity giving beautiful balance to a very impressive richness. From Bouquet to finish this is a stunning wine.

Food Matches

Delicious with turbot with scallops, prawns and herb butter.
