Produced from vineyards that lie on the upper slopes as the hill bends around towards Meursault and away from Saint-Aubin itself. Matured in 600 lt oak barrels (2/3 1 year and 1/3 2 year), Olivier uses no new oak in order to preserve the intense minerality.

Domaine Hubert Lamy

Created back in 1973 by Hubert Lamy, this domaine has been run by his son, Olivier, since 1996 following his training at Domaine Meo Camuzet. He immediately introduced the changes that have ultimately elevated this domaine into the higher echelons of Burgundian winemaking. He ceased selling grapes to negociants and sold off peripheral vineyards to concentrate on the oldest and best sites. High density planting was introduced to glean as much expression of terroir as possible and selection tables were introduced into the cuverie to ensure that only the finest grapes are used. His more recent move to reduce the amount of new oak and the introduction of demi-muids (300-600lt barrels) has also helped to improve the wines at this domaine and resulted in a greater propensity to age. Olivier adapts his winemaking to the vintage. It is now without doubt one of the star domaines in Burgundy and any quality cellar should contain some wines from Olivier Lamy.
