Whilst walking through Burleigh wood adjacent to the distillery, Baxter came across dandelion, burdock, silver birch, elderberry and iris. Enthused by his findings, these botanicals went on to inspire the first recipe and it seemed fitting that this woodland should give the gin its name.
Light, vibrant citrus aromas followed by eucalyptus and bright juniper. On the palate sweet, smooth, earthy juniper and violet. Mellow and smooth on the mid palate, candied citrus and aromatic spice with a floral and aromatic finish with hints of drying white pepper.
Perfectly suited to cocktails such as the Martinez.
