This is textbook Montagny. Produced from East and South East facing vines planted on chalky clay soils that are rich in limestone. Fermented in stainless steel tanks and aged on the lees for 12 months. A perfect drink before dinner but delicious of course with food too

La Cave de Buxy

Established in 1931, the Caves de Vignerons de Buxy is based in the Côte Chalonnaise, 46km south of Beaune. The vineyards are managed by 120 families who are rewarded for the quality of their grapes rather than the quantity that they produce. Strict viticultural guidelines are followed with a programme of continual vineyard assessments. It is very rare that one can equate Burgundy with affordability as well as quality; however this top Cave Co-operative can certainly lay this claim.
Aromas of wild white flowers, citrus and a touch of baked apple. The palate is taut, with an oyster shell freshness and stoney minerality.
Carpaccio of scallops with truffle olive oil and Balsamic vinegar on a bed of mixed green salads.
