Château Pavie

Château Pavie is the largest St.Emilion 1er Grand Cru Classé, with over 35 hectares of vineyards located on the St-Emilion Côtes. Situated south-east of the village of St-Emilion Pavie's vineyards lie on a south-facing slope of the famous limestone plateau. For many years the property was owned and run by Jean-Paul Valette but was purchased in 1998 by Gérard Perse, who also owns Pavie-Decesse and Monbousquet. Pavie's wine is typically a blend of 55% Merlot, 25% Cabernet Franc and 20% Cabernet Sauvignon ands ince 1998, the grapes have been fermented in spanking new wooden vats with the wine then being aged in 100% new oak bariques for 18 months and bottled unfiltered. Pavie produces elegant, harmonious and stylish St-Emilions that typically display a fine bouquet with good depth of fruit on the palate. Under Perse Pavie has become richer, more intense and more concentrated. The Chateau Pavie vineyard is farmed using sustainable, vineyard management techniques. Part of the goal at Chateau Pavie is to produce wine from ripe grapes and low yields. 70% of the vineyard is farmed using organic methods. It is the goal of the estate to become 100% organic.

Tasting Notes

"This wine has an inky purple color and a stunningly sweet, ripe nose of mulberries, blackberries, blackcurrants, licorice and incense. The oak still has some presence in the aromatics, as well as in the full-bodied, very concentrated, skyscraper-like mouthfeel and texture. This wine feels almost as if you could lose your palate in it, it is so dense and deep, yet at the same time it possesses silky tannins and rather remarkable purity, balance, and a good 60-second-plus finish.
