The Carillon family has been making wine in the village of Puligny-Montrachet since the 16th century, beginning with Jehan Carillon, who was a vintner in Puligny in 1520. After completing his studies at the winemaking school in Beaune. Jacques Carillon joined his father in the family vineyard in 1980. In 2010, Jacques and his brother split the Carillon domaine and he now farms his 5.25 hectares of vines with wife Sylvia.

The Carillon family has been making wine in the village of Puligny-Montrachet since the 16th century, beginning with Jehan Carillon, who was a vintner in Puligny in 1520. After completing his studies at the winemaking school in Beaune, France, Jacques Carillon joined his father in the family vineyard in 1980. In 2010, Jacques and his brother split the Carillon domaine and he now farms his 5.25 hectares of vines with wife Sylvia.
Produced from 7 separate perfectly exposed plots spread around the village totalling 2.7ha, with an average vine age of 40 years. Yielding just 35hi/ha in 2020, Jacques picks all fruit by hand in small baskets, presses lightly to maximise fruit and avoid bitterness from over-pressed skins, with the Chardonnay juice then cold clarified before fermented in tanks. The nose is rich and concentrated, with a steely/fresh backbone. The palate is poised, razor-sharp and is complex and fulsome. Notes of white stone fruit, citrus, roasted nuts, candied grapefruit, marzipan and spice. The oak supports rather than dominates, and the minerality adds structure and a wonderful sense of completeness. A great Puligny!
No new oak is used to mature the wine, maturation takes place in different ages of barrel – 15% 1 year old barrel, 15% in 2nd year, 15% in 3rd year etc. up to 100%.
