Vinification
Made from a vineyard of 80 year old Carignan vines grown on prime high altitude vineyards, the grapes are harvested mainly by hand, and the red grapes fermented in tank using a combination of de-stemmed and whole bunch grapes; ferment uses only natural yeasts, with a longer and cooler ferment to extract good colour, enhanced fresh flavours and to ensure the dark fruit and acidity of the Carignan grape is held within the wine. After ferment, the wine benefits form a little press wine added, before settling and racking into tank.
