Old Vines Carignan, Xavier Roger

XAVI001
The grapes for this wine come from old Carignan vines, some of which are up to 80 years old. We 'found' this wine on a buying trip many years ago and continue to purchase every drop from these rare vineyards - a really startling and profoundly enjoyable red with lush fruits and soft integrated tannins.

Vinification

Made from a vineyard of 80 year old Carignan vines grown on prime high altitude vineyards, the grapes are harvested mainly by hand, and the red grapes fermented in tank using a combination of de-stemmed and whole bunch grapes; ferment uses only natural yeasts, with a longer and cooler ferment to extract good colour, enhanced fresh flavours and to ensure the dark fruit and acidity of the Carignan grape is held within the wine. After ferment, the wine benefits form a little press wine added, before settling and racking into tank.
