Nyetimber

The Nyetimber estate counts three major landmarks in its history. Its earliest beginnings saw it first recorded in the Domesday Book in 1086. Then there was the planting of the first vines, almost exactly 900 years later. Most recently, there was the decision in 2006 that Nyetimber wines deserved an audience on the world stage. Nyetimber is in the fortunate position to own one hundred percent of their vineyards and all of their wines are produced from the 152 hectares planted at the best sites in West Sussex and Hampshire. Nyetimber’s vineyards were the first to be devoted exclusively to the holy trinity of Champagne grapes: chardonnay, pinot meunier and pinot noir.
Lovely pale gold in colour with a fine bead. This Blanc de Blancs shows Nyetimber's classic signature of delicate floral and citrus aromas followed by subtle vanilla and toast flavours, but now with a pure crystalline core thanks to the inclusion of Chardonnay from their Hampshire vineyards. A long complex finish makes this a wine to be savoured.
A superb pairing with smoked salmon, seared scallops or to enjoy with a lovely bitter dessert.
Each vineyard parcel is treated uniquely, from picking to gently pressing to vinification in separate tanks. All wines are made according to the strict rules of the Traditional Method, aged for extended periods of time on the lees and given sufficient post-disgorgement time before release.
