English Whisky Co. Nelstrop's Pedro Ximénez

At The English Whisky Co. they mature some of their single malt whiskies in Pedro Ximenez Sherry Casks. These casks are full of beautiful rich dark sherry before they take delivery, so they decided to take the sherry as well as it is too lovely to leave behind. Since arriving at St. George's they added some of our single malt to it and left it in the casks to continue maturing. The resulting drink is a wonderful fortified wine, which makes a superb drink for many occasions.

St George's Distillery

St George’s is the home to The English Whisky Co. The beautiful distillery was designed and built by the Nelstrop family for the specific purpose of producing the very finest English Single Malt Whisky. Why England and more specifically why Roudham, Norfolk? Well, there are only two main ingredients in whisky, barley and water and they have them both. They draw the purest, cleanest water from the Breckland aquifer deep beneath their distillery. Norfolk is one of the world’s premier growing barley regions, so their supply is plentiful and local. The only other thing needed to create the very best malt whisky is oak casks. They don't add colour, they don't add flavour, they let the barrels do that for them, so they have to buy only the very finest oak casks. Most of theirs are supplied direct from America, having first been used for the maturation of bourbon. They also mature in sherry casks, and various other wine casks. Their whisky is batch made by hand with no computers, filled into casks and then left to sleep until their distillers consider it perfect for bottling, which of course they do by hand - one bottle at a time. They are really proud of these things and believe you will taste the difference too.

Tasting Notes

Aromas of stewed dark fruits, the theme continues on the palate with other flavours such as apple and raisin coming through. The finish is warm with hints of fruit.
